I'm just wondering. 
I installed ruby 1.8.7 on my MacPro 2x2.26 GHz, and then installed all the gems I need.
It took forever.

Old rubygems maybe, make sure you're at least on 1.3.1.
One ruby process will only use one of your cores, but it still shouldn't take
"forever".

Automatic parallelization is very difficult :-)

And, let us know what gem you tried to install.
